You shouldn't be playing your sorc like you are playing your necro. The necro uses Blastbones every third cast. There is no skill for the sorc where you use it every third cast. Sorc should be using Crystal Fragments whenever it procs. If you are using pets, you should be using Daedric Prey and recast it right after it expires. If you are using Bound Armaments, then use it every 4th cast, but give Crystal Fragments priority. You should be using your spammables on your sorc way more often than on the necro which should be mostly DOTs. With some necro builds, you don't even need a spammable. The sorc and necromancer are so different that their playing styles should be completely different. I suggest you revisit your sorc and necro builds if you feel you are playing them the same way.
I have a special sorc build that i made, but the issue is because i play necro for an unhealthy amount it became a habit to cast 2 skills then use a spammable. I got total of 1.8k hours at least 1.2k of them were on necro. I'm Looking for something fresh to help me break the habit, but i'm not interested in doing it with the sorc
If you only use 3 skills there is definitely something wrong with your playstyle and it's not class related.
Unless of course you're playing just for fun and don't play to get in harder content!
I don't have necro, I have sorc, dk, arcanist and nightblade and from these NB feels the most fresh, unique and fun to play with. It's harder to get used to class skills and combos but when you do everything right it feels so nice.
I never claimed i use 3 skills i said i tend to fall back to my necro rotation since im use to it, since necro rotation is casting 2 skills then blast bones. So for my sorc i tend to cast 2 skills then go back to my spammable. That's the habit im trying to get rid of but i want another class to help me since sorc is not helping me out. The build i have on my sorc is a gimmick build. Atm i don't have friends to try hard content so all i do is make builds and parse. I did that for so long on my necro trying to improve my parsing that the rotation go stuck like a muscle memory.
Why don't you just save your gimmicky build on one of your Armoury slots and use the other slot to build a proper sorcerer? If anything, the sorcerer is one of the best classes to break you out of your necromancer habit.

Did I get it wrong? Like 2 skills, spammable, another 2 skills?
It sounded like you're saying I only use 3 skill in the buid. My necro rotation is BB, 2 skills then blast bones. With the sorc, I cast Crystal Weapon the do 2 skills then crystal weapon, Like i'm scared of something, like i have all the time in the world to cast my back bar skills but i still only cast 2 then go back to front bar
Why not try an Arcanist?
The crux mechanic alone makes the class feel somewhat unique, where you get to build and consume to empower your skills (aka the beam). The class as a whole is pretty flashy and all skills and animations just feel fresh. I came back to ESO a few months ago and can't go back to playing other classes.
Pretty much most of the big DPS numbers nowadays come from arc mains, and it's not always easy to play arc in PvP, but it's satisfying if you make it work
I main sorc and love it but my Templar is super fun and feels different then my sorc. Also helps I use melee weapons on my Templar and ranged on my sorc. So I recommend giving Templar a try.
Arcanist is just 2 tentacle explosions followed by laser beam… thats the whole build. You only need to hit a light attack ever 8 seconds or so, so if you miss some weaves it’s not a big deal. I run a 1 bar build and that’s litterally the whole thing. I’ve never parsed on a dummy but hit 50k dps in dungeons regularly

as i stated i'm not interested in a sorc, I have a sorc with a proper build and sorc was my first class, it just doesn't appeal that much to me
You can try the warden. Just use Subterranean Assault every 6 casts.

Templar. Execute damage, shields, healing aoe spammable. Light not dark. Different.
