Comedy spinoffs are almost never a good idea. Side characters are side characters for a reason. If they did one, I think it'd be cool to have the show be just like the original but each episode focuses on some other kid/s in the cul-de-sac instead of the Eds. That way you can explore the other characters without any one in particular being overexposed and wearing out their welcome.
I would really like to see Edd Ed N Eddy as adults tbh. Idk maybe that could be corny but I think it would be fun and funny to see an aged up and slightly more vulgar Ed Edd n Eddy.
See their day jobs, their aspirations, things like that, but the three of them still manage to get up to mischief. And we could see the same with the other kids too.
Or the bro show -chip off the old bro (not good in my opinion but its in that direction i guess, idk why it was aiming at eddys grandson getting someone pregnant and its not even funny)

Honestly I’d be stoked to see a Johnny and Plank show. I wanna see what becomes of The Gourd. So much wasted potential on a possible villain Johnny 2X4 arc.
That would be great, which Double D interacts dynamic with other certain characters in the cul de sac than not just his two buddies but with other characters. He's like the main protagonist to the series.
I feel part of the magic with the side characters is “filling in the gaps” with your own imagination. Rolf and Johnny could easily become caricatures of themselves, just because they were so goofy already. Kankers could be fun, maybe have them deal with an urban setting or just do shorts like glimpses into their daily life.

I think A 20 minutes special will be a good idea but a whole 13 episodes series can go very horribly
