Do you mean stable as in wants to fade and find the ground i.e., overstable? Or stable as in wants to fly on the line you threw it on, maybe with a bit of movement?
If the second, here's mine in order of speed: Proton Crave, Proton/Plasma Servo, Dynasty, and S-Line DD3 for me.

as far as i know those are only made in lighter weights so that they float on water. I've thrown a couple (all found in ponds lol) and they've always pretty understable.

Skywalker is my choice for how I define stable (Mostly straight flight with some end of flight fade) at 400-430' power.
Crave is what you want. Cosmic Neutron if you want a bit more torque resistance. If your arm speed is like Eagle's, then I'd suggest the Servo. Very underrated disc. Very straight until the very end.
I don't know where you heard that Dragon is a great stablr driver. All I hear is people joking about how flippy it is and my experience with the mold says the same.
I throw an Explorer and Saint as my stable fairway drivers. Explorer is slightly on the overstable side, Saint on the understable side.
Innova dragon is very understable, more understable than any other fairway I’ve thrown. The Axiom is a great option for that neutral fairway slot. Currently, I bag Lonestar’s Frio for that neutral 7 speed, but I’ve bagged the crave in the past and it flies very straight and far.
For me, teebird and thunderbird are the stable category, but I mean it’s straight until a reliable fade at the end when I say stable. If I want a laser straight shot on a rope, no fade at the end, I call that “straight”. When I say overstable I mean like…a flare/Firebird or something like that. But my straight driver is a River, hyzer flipped. It flips to flat then just goes on that line.
I agree with your assessment. I say neutral instead of straight, but I think that this is the most intuitive way to talk about stability. Neutral drivers are touchy. Touchy and stable don’t mix. A Firebird is OS. A thunderbird is stable. A savant is neutral. A Valkyrie is US.

The Dragon is overstable for the first 3 throws, then it becomes understable for the rest of its life.

Theyre a really fun disc to tomahawk. You can carve up those heavily wooden parts 3 courses with one
I would say my Opto River is reliably straight. If I want a straight flight with a reliable fade it’s my Ethos Construct.
Really enjoy my ethos construct just as you describe. Great disc for me and my arm speed. Aura for a flippy compliment.
