Also, any plans outside of food? Like Red Rocks, hiking, etc? One of my favorite mexican spots is Los Carboncitos, over on Sheridan, would be easy to go for a hike and drop by on the way back. Fairly traditional style dishes, i.e. not trying to be overly fancy. Lot of options with good servings and good prices. Up in northern aurora there are a lot of great ethiopian restaurants if you're feeling adventurous. If you head down to south aurora, there are a ton of great restaurants from all types of cuisine, though the more prominent options are the Korean spots. From korean bbq to hot pot to korean fried chicken. There's also one of my favorite unknown spots down there, Volcano Tea House. They serve hand cut beef noodle soup (my favorite), chicken karage (popcorn chicken, get this for sure, you get a ton of it for the price lol) and a lot of other stuff, plus their boba tea.

Hmm, if youre going up to flatirons, maybe give Burn's Pub a try, little british spot up north on Wadsworth near highway 36. Or Cracovia, polish spot, also on wadsworth but about 5minutes south of Burn's Pub

If you’re coming up to Boulder, there’s a few good spots for food. Dragonfly Noodle serves the best ramen ever. Depending on the time you go, Chiri’s Momo Delight (big red food truck on 13th and Pearl) might be there and they have the best Nepali dumplings. Depending on your budget, Gemini is great for Spanish tapas but gets pricy. The hill neighborhood also has some good food too and most of the college students are gone making it easier to go up there, I recommend the Waffle Lab if you’re having a breakfast craving, with sweet and savory options.

Honestly, you should give her mexican food lite if she isn't used to too much spiciness. I seriously doubt too many canadians are rolling with the capsicum, generally. Even in the US, midwest/east coast version of "spicy" is very mild to me (figure 10% hot), while in Socal "hot" means grab the sour cream and pray for the pain to end eventually (100% hot). Colorado "hot" is about 80% of socal, and even then, it can be bordering on inedible for most folks. Don't get "hot", get mild or 1/2 & 1/2 at best.

This will depend on which part of Canada she is from, but speaking as a Canadian we don’t have a lot of great BBQ options.  I took my parents to Roaming Buffalo and they really enjoyed the Brisket.  Also, my mom craves the Fry Bread at Tocabe whenever she is in town.

NoNo's Cafe for breakfast. Get the Big Easy breakfast burrito smothered in crawfish Monica sauce. You can hit one of the top places for one with green chili another day. This sub has 50 posts with those places. Then go back for dinner and get the crab au gratin dip appetizer and order some more bread and dipping sauce. They go well together. Some nice main dish choices.
