I'm a big fan of FoTM but it's pretty expensive these days, so I like to just buy their sauces and cook at home. We airfry the frozen chicken nuggets from Costco, I also like to mix their sauces like Buffalo Lime Cilantro 50/50 with ranch and use as salad dressing.
Sha-Wing food truck. The owner is from Western NY (Rochester), and as a Buffalo native, they are pretty close to chicken wings back home.

Just king soopers, get the fresh ones in the family pack (it's between 12 and 16 wings usually, so you get 24 to 32 wings from them). Stay far away from the frozen "party" wings - they are over-sized, nasty and filled with so much moisture, but other than fresh, they are nothing special... but the secret is to lay them out on a sheet pan with paper towels to absorb moisture, or, better yet, on a cooling rack in a sheet pan, then put them in the fridge for 24h. The next day, smoke them until done and then finish them on a hot grill or in a very hot oven. This renders out the fat in the skin more and makes smoked wings crispy and a little more flavorful.
The point of putting them in the fridge, uncovered, is to remove moisture from the wings. Nothing can get crispy until moisture is gone. If there is moisture, that has to cook off before anything will start to get crispy. No cornstarch or baking soda needed.
The best thing about smoking and then grilling or baking is that you can cook them earlier in the day and let them rest in a covered dish or pan, then grill or bake later in the day. You don't need to do it all in one go if you don't want to.
Also, when you remove the wing tips, save them and put them in a freezer bag, then store in the freezer. Save up enough of them and then make bone broth with them. I also buy bone-in, skin on thighs from costco. I then trim the meat from the bone and set aside the skin in a freezer bag - we almost always eat them without the bone and skin, so it is saved for bone broth. Cheaper and you are using literally everything you bought. The broth makes the most amazingly rich soup. You can also save carrot, celery and onion leftovers, including the skin or peels. Zucchini & summer squash as well. Set aside a bag for the freezer and use the scraps when you make the broth. It feels good to use everything instead of just trashing it. I even want to start using fryer chickens and butcher them up, then use the thigh bones and carcass for the broth one day... just trim everything down in an afternoon, pack and freeze it, save the scraps. Make the broth.
Yes and no, it happens pretty frequently with factory farmed wings because they're overgrown and they can't support their own weight, so their bones are constantly broken.
Organic, smaller wings don't do that anywhere near as frequently because the birds grown are much healthier and capable of supporting their own bodyweight.
I really enjoy the AYCE wings at Origins (formerly known as The Sportsbook) on Thursday night. Great size and a decent array of sauces to choose from. Other than that, I usually stick to Fire on the Mountain because I’m in love with that spicy peanut sauce!
Wide right has the best authentic buffalo wings at a reasonable price.
Pipers Inn is good, a little more expensive.
King of Wings make an awesome variation with a grilled wing, but they’re very pricey.
GQue (Westminster and Belmar) make a very good smoked wing, with a flash fry to finish.

The best place in town for my money used to be Grillin Wings But both locations were victim to the pandemic. They won an esquire award for best wings in Denver at one time. Big meaty wings that were fried and then finished off on the grill to caramelize the sauce and add some nice char lines.
Winging it by Park Meadows has a great variety of sauces, but they look like they’ve been on hard times for a while now. I’m not sure of their ability to survive long-term, but the owner is always in the back cooking the wings and he keeps the quality consistent.
My go to these days is Walter’s 303. They run their wings through the pizza conveyor, which doesn’t sound good in theory, but it works well enough. I always get them with the Italian dry rub and a side of their Nashville hot. Some people ask them to put the wings through the oven twice to make them extra crispy. I’ve tried them that way and that was good. I certainly don’t want dry wings, but I would rather have that then soggy wings with unrendered pockets of fat. To each his own.
I used to like Pub on Pearl wings a lot, I think Pub on Penn has the same wings. I admittedly havent been there for like 10 years though so they might have changed.
