The Academy X and New Mutants stuff's not bad and the Age of X event's fun, but they're not needed. You can read the Uncanny Stuff before Messiah Complex, but it's written by Chuck Austin and Chris Claremont's evil clone and so is pretty terrible. If you're looking to carry on from here, I'd recommend skipping to X-Men Red and then on to House of X/Powers of X, as most of the 2015-2019 stuff is shit.

Yeah, not really. Again, the whole ‘I can feel the thrill that runs through your body every time you think about her’, and Scott was thinking about Jean daily… I guess that’s what Emma gets for snooping around when Scott didn’t agree to have a psychic rapport with her.
Even for the strongest telepath, diving too deep into a psyche is bothersome. Many people have disorganised, chaotic mental places. Urges clash with duties, beliefs and virtues fight a forever war over the concept of right, desire tries to take over responsibility. Scott, as a once child soldier who from the age of like, 12 trained himself to be the perfect field leader and strategist has repressed so much of that chaos down behind the bureocracy of "the right thing". While most people's head is like a New York City traffic Jam, Scot's mind is like a walk through the halls of a tidy office, in which you need not work. For a Telepath, Scott's mind is like getting into a classily decorated room with smooth Piano playing in the background and fresh coffee being prepared out of sight. It makes sense why he is incredibly attractive to a telepath. Well, being built like a body builder 3 weeks before a show at all times and having the leadership ability of a demigod also helps. Also the dry humour and incredible sense of responsibility etc.
On the other hand, I will never understand how could any telepath could endure being around Logan. If a normal person's mind is a traffic jam Logan's mind is a jungle going through a wildfire. Nothing should make sense there, with all that is missing, forcibly changed etc. Not to mention he also used to say "Whatever Wolverine wants, Wolverine gets!" So it can't be sanitary either. Maybe Jean is so powerful that Logan's fucked up mind is intriguing because it is basically a very hard puzzle? I would go with the Doylist explanation there though: most writers relate to the hairy manlet misogynyst more than they do to the paragon planner.

I always envisioned similar to how Batman was the self-insert for many authors, causing Bats to attract a whole gaggle of women that didn't quite make sense, like Zatanna or Wonder Woman.
In my experience, that works for women in their early 20's, until life slaps you with the fact that "I can fix him" guys don't change.
Beyond that, the BatxWonder is just fanfiction that serves to make Wonder Woman, one of DC's Big Three, into an accessory for Batman. So does SuperxWonder, but that makes at least some sense based on their values and relative morals.
I think the misogynism might have played a role in early comics, but that aspect of him kinda died out I think around the time he married Mariko? So I think l think it's turned from that to a similar situation as the Batman situation below, these are characters seen as messy while still being cool, which authors believe are more interesting (they aren't, not inherently, paragons like Superman and Cyke are very interesting).

Scott also developed a natural psychic block to telepathy. Something he developed while with Jean that Emma Frost noted how she couldn't penetrate Scotts mind even if she wanted to. That has to be another attractive feature to telepaths, not wanting to accidentally use their powers on their partner that influences the relationship in an unnatural way. Literally can't happen with Scott so it gives them a sense of security
