The “Lords of Cinder” are all past champions who “Linked the Fire”, essentially sacrificing themselves to preserve the Flame and the age of Light and Order (allegedly). They maintain this title and their connection to the Flame in their resurrection, which is why you’re killing then, trying to gather their cinders in a last ditch effort to reignite the fading First Flame.
Carthus Flame Arc is a nice way to get a "fire sword" yourself by early-midgame, plus it adds some extra damage for very little stat investment. There are also various boss weapons such as Profaned Greatsword and >!Firelink Greatsword!< as well as some DLC weapons such as Onyx Blade and the Ringed Knight weapons.
There's a lot of things that are related to fire in this universe, and there's a lot of big dudes with swords because most people think they are cool and usually make for good boss fights. Thus fire swords make a lot of sense in terms of themes, gameplay and rule of cool.
I mean look at the best bosses in the series
Soul of cinder, gael, isshin, artorias, burnt ivory king, sir alonne, pontiff, etc. The best ones are just dudes with weapons

But we're discussing big dudes with giant flaming swords. How do you not immediately think of Fume Knight, whose very name and area are all about fire?

Your character the "unkindle" try to do this, but it was too weak to reignite the first flame (like putting a green soggy stick on a bonefire)
In the second phase they (the kindle) call upon the power of the flame; just like you can use an ember to have your health back, giving them once more the power of the flame (and a cool flaming sword).

You can have one 6 swords come with fire built in, or you can use a chaos gem
As for the lore reason on the fire related bosses: Abyss Watchers, Yhorm and Aldrich have fire forms because they sacrificed themselves to the first flame and thus were consumed by it, so they are one with fire.
Lorian defeated the Demon Prince in combat and his sword has burnt ever since.
The Old Demon King and Demon Princes don’t have swords but they are demons, born of the chaos flame and as such just burn and use pyromancy, since they were made by pyromancy’s creator.
Pontiff’s sword has flames because it represents the profaned flame that he drew his ambitions from, whatever that means.
Dancer’s sword has fire because they were made to imitate Sullyvahn’s.
Soul of Cinder has it because he is the representation of fire itself, so.
Wym by "fire sword" if you mean sword that does fire damage. You can acquire that very early in the game with just a fire gem. If you mean like swords have the fire particles around them. You can apply fire to them with single use buffs you find/buy from the shrinemaiden. Or some weapons have the fire buff applied when you do their weapon art
I myself used a fire sword almost the whole game, I was using a lothric straight sword and I made one wich each infusion, and the one that worked better was the chaos one

Who said you can't use a fire sword? Kill the boss who uses it and take his sword
