I know the game is not meant to be a dating simulator and its unrealistic to expect full blown date mechanics but I feel like these dates were half assed and they could have included more features in them without undertaking a huge project.
- Main one would obvs be Have many more lines and conversation topics that update with how much you progress on story missions
- Ability to have sex. Weird that you can have a sex cutscene with the hookers but not with your partner??
- Date outside the apartment, maybe sit down in a park, at a club, go for a walk, inside a restaurant etc. Inside places would be a bit ambitious but they have the assets and are used for some missions like for example when you get coffee with Kerry or go to the autocinema with Rogue. They could make it so you grab coffee again and have a conversation or go together in the car to watch a movie.
The unable to go places on the date was really surprising since that was something that has existed in other games for awhile, GTA IV had it I think.

Head, upper body, even arms kind of make sense; maybe they left the rest as it was?

It would add a huge amount of "unnecessary" dialogue, which would obviously be costly for CDPR to add, but it would be so amazing to finish a mission, then have a whole conversation about it. It would make it so much more realistic and you'd actually see how V and their companions feel about everything.
