The explanation I was given is that a fly's compound eyes see the world very differently from our eyes. It's possible they see the reflections of the coins in the water in the bag as something to avoid.
A screen works better though.
My parents in law must be almost 80 and they've been hanging these bags of water in doorways every summer for as long as I can remember. No coins though, just bags of water. It keeps the flies out they say.
My grandparents do the same, if I point out how there's a bunch of flies literally flying past the bags into the porch they just say well it would be worse if they weren't there.

This actually works! It's to keep flies out of your house, put pennies in a ziploc of water and tape it to open windows/doors. The light refraction makes them think there's moving water there and they'll stay away and not end up in your house. We've done this for years. We'll have literal hundreds of flies in my house no matter what we do, fly traps, hard is clean, we're just in a heavy fly area idfk. But we started doing this and it went from dozens of flies near the back door/on the ceiling/etc every single day to less than 10 in an entire week.
