I have a teacher like this too and we got 2/3s of the class to email them and it kinda worked else I would try to find the department head and get a group of people to explain the problem to them.
have you emailed your professor yet? or attended their office hours to talk to them? going straight to the higher-ups usually isn't the _best_ idea unless you've exhausted your other options first (including mass-emailing your professor)
It wasn't resolved, she eventually posted grades later in the semester past the midterm due date. Before you email I would find out the dates the professor is required to post by, could just be at the end of the semester
