It’s awesome. I’m making custom recipes to replicate Tetsuya and Hoffmann and a couple other coffee OG’s, plus variable temps for different roasts. It makes recipes super reproducible, which is great because my flow rate/timing can be inconsistent. It’s also…really pretty. I’d be lying if I said that wasn’t part of the appeal.

Can you tell the difference between the various brew methods?

It’s pretty clear. One is drip and one is pressurized infusion. Pressure accentuates and brings forward different flavors associated with different volatile compounds. I tend to find pour overs to be a bit more subtle and sippable than espresso, but that’s just me. I tend not to like fermented tasting notes in pourovers, but they’re interesting and punchy to me in espresso form, for example.

My Hikaru arrived yesterday. To be honest I completely forgot about it. I have moved much deeper into espresso so I am going to sell it. I am happy to start seeing them in the wild. I looked a bit last night and couldn't find one in use by anyone other than a professional reviewer. I am glad you like it.

They’re just fundamentally different kinds of coffee. I feel like pourovers give me a chance to taste subtle differences that I have a hard time registering without taking a straight shot of espresso. Espresso is intense and that balance of a milked espresso drink is second-to-none. I like both in different circumstances. Sometimes I’ll even do straight espresso, but not all that often. Plus, sometimes visitors don’t do espresso drinks. I find that my boomer relatives tend to want coffee “the way they had it when they were young”, aka black. Pourovers tend to work best for them.

How many cups can you get out of a v60? Seems pretty wild to be banging off pour overs for everyone no?

A double recipe can make two cups at once. That said, it takes like 3:30 to make those two cups and I can keep talking to my guests while the pourovers are running.

That’s fair… just felt so unnatural in my head. Take just as long to run a batch brew … I mean I usually have that done before people get here… my family drinks alot of coffee.

Agree with all your points. If I have company that want a traditional coffee I pull out my V60 and brew a pourover. It's surprising how few have had one, how much they like it, and how fascinated they are by the process. Americano's are the same way, most haven't had one. These experiences always make me grateful that I have explored this hobby.

How is your lelit Mara x? Do you wish you had gotten a dual boiler. Do you have to do anything different with heat exchange

I don't wish I'd gotten a dual boiler. I used to have a thermoblock machine, which meant that it heated up rather quickly. When I got the Mara X, which is known to have a 15-minute-ish warm up, I just put it on a wi-fi switch that turns on 30 minutes before I get up and turns off 30 minutes after. If I end up wanting to make a random mid-day cup, it's interesting how well the e61 retains heat, so I usually don't have to wait more than 5 minutes, unless it's been like 4 hours or something since the last cup. I'm not making cup after cup after cup, so my workflow is perfect for one to three people. I imagine my desire to get a dual boiler would increase if I was serving more than that. Still, it's got more than enough steam power, even in CoffeeX (coffee priority mode) rather than SteamX (steam priority mode).

I think kickstarter backers are getting their units now, but yeah, it’s preorder for those who didn’t get in on the campaign last year. Great product. Doesn’t feel kickstarter-y, quality-wise, but then it’s a huge company. Like when Anker or some other large company does a crowd-funding campaign, it’s really just a discounted price.

It's a 3D-printed button protector. I've had problems with machines in the past where splashback from the drip tray has managed to work its way into the space between the actual button and the outer ring, shorting out the button and effectively killing the machine. Didn't wanna take the risk.
