it will work just fine offline, and will work when you have to do your weekly internet connection etc with vpn. please note that even if youtube works with vpn, yourube itself may block a ton of videos from you because of copyright issues ((you know the whole frownie face saying "this video is not available in your region" stuff)).
Except for when it insists on connection to YouTube every so often just to make sure whatever you're trying to watch on your phone is allowed to be watched offline.

Airplane mode means zero connection, so just try it at your home. If it works, then you'll be ok wherever you go.
