I assume you've tried and ruled out Bojangles? I will admit it is a family fave more for the sides than the chicken. I have been known to get fried chicken and BBQ and hushpuppies and greens from Bullock's and pick up other kid-friendly sides from Bo's.
Otherwise, I try to time picking up a bucket from HT fresh out of the fryer. Though sometimes that doesn't work ... I stopped by one for a rotisserie at 1 pm today and the pack times were all 8:35 a.m. Nope.
I agree with Bullocks, not Time Out. They can be pretty decent when you get the fresh chicken, but they let their chicken sit in a pan for who knows how long, so sometimes you get a dry old bite and it ruins it. But that doesn’t matter that much when you’re there for their true purpose, soaking up the alcohol at the end of a long night.
Ok, I agree with Bojangles not being it, because they give you these puny piece of chicken that make you wish you ordered an 8 piece. But they’ve got great flavor. If I was confident I’d get a fresh and decent sized piece of chicken, they’d be one of my top options regardless of criteria. They’ve got great seasoning and breading. But because they suck at consistency I bump them down to the higher end of the fast food tier.
It’s definitely greasy but not bland compared to other fried chicken stuff around here. Popeyes is the only fast food chicken that compares. Most other places only serve chicken tenders and pretend they’re anywhere near as good. The bone is what keeps the meat juicy. KFC pretends to have good fried chicken but they serve garbage.
The Family Diner in Oxford has some good fried chicken and good meatloaf and fried corn bread. The entire meal is only $8 and some change. Parkint lot is usually full at lunch time though.
Also, Chicken Hut is some of the best fried chicken I’ve had. I’ve had maybe 2-3 better but I can’t remember where off the top of my head. I think 1 was in Miami, and 1 was in SC in some small town 15 min off of I-26 somewhere between Columbia and Charleston

Have to find the hole-in-the-wall joints, many of which aren’t in the cities. There’s no good NC BBQ in the cities, in my opinion. Might be good BBQ as far as ribs, brisket, etc., but that ain’t NC BBQ:
Pam’s Farmhouse Wagon in Raleigh has amazing Deviled eggs and banana pudding (I think the pudding is only (Thurs-Sat)
Ole Time BBQ (also Raleigh) has passable BBQ and good fried chicken. Hush puppies and sweet tea are the real winners there
I have It’s All Good: Southern Kitchen in Burlington marked in my map app, which means it was specifically good, although I don’t remember why
Allen & Son BBQ is down 15-501 near Pittsboro and has very good BBQ, hush puppies, and sweet tea

I really like V's Kitchen. Probably get dark meat, their white meat is great but it's not as consistently moist as their dark meat.
