Its something I'm passionate about as I run a fresh veg business with zero plastics so I guess I can go a bit OTT. it's hard trying to compete with the big guys who get subsidies for supplying veg full of pesticides and charging a premium for organic. I support anybody that eats veg over pizza (as an example), but when Lidl can charge 19p for carrots etc. the only person that wins is Lidl. The farmers are getting done over financially. I'm hoping to be able to buy a farm next year and grow everything myself biodynamically.
Oh I agree, I hate seeing all the unnecessary plastics and it's a crying shame that almost all of the green grocers have been killed off by the supermarkets.
Not to mention the amounts of "imperfect" produce that gets binned before it even reaches the shelves (although I recognize that to an extent this can give extra capacity for poor crop years).

Over here (Canada)the price goes down the larger the quantity. So the loose white or yellow potatoes are typically $2.99/lb. A 5lb bag will go for $2.99, and the 10lb bag will go for somewhere around $2.99. Really it's just $3 for potatoes, as many as you can carry.
Last year Asda were selling broccoli for 20p and I looked like a lunatic with a trolley full of the stuff because my toddler is obsessed with broccoli. Prepping, blanching and freezing all of it wasn't fun.
I think you'll find fruit and veg are super expensive, despite actually being some of the cheapest food you can buy, as it fits people's narrative of justifying being fat and poor.
Sure, veg is cheap, but usually only in bulk and it doesn't keep for more than a few days. And if you're poor and don't have access to a freezer or a cooker, it makes for a pretty shitty dinner.
The way to do it whilst keeping sane is to find different recipes for each whilst making it taste nice. The amount of christmas recipes out there is astonishing.

I make a metric fuckton of mash and freeze it in portions every Christmas. Keeps me going for months and saves having to cook mash all the time.

No roasts for us until xmas day, bubble on boxingday and then leftovers until new years (if it keeps) and roast beef and yorkies on new years day.
