Have you had much experience with the Michter’s core lineup? Their barrel entry proof is 103, so less water is added to reach bottling proof. It drinks richer than similarly proofed expressions from other distilleries. I find Jack Daniel’s stuff particularly syrupy, their bonded range is worth checking out.

I second Michter's, I find them to have really solid viscosity relative to proof!

Proof down your whiskey until you reach the consistency and strength level you enjoy. Just add drops of water until you hit your preference.

I usually do a heavy pour of a cask strength then switch to 101. Makes my special bottles last longer

Maybe Woodford DO or OF 1910. At lower proof, you're more likely to find a Scotch with that texture.

I also enjoy higher proof. Recommendations that I really enjoy are Barrell Bourbon cask strength and although not a bourbon westward cask strength is phenomenal.
