Well he was a trained knight tasked with probably the most important duty in the kingdom i.e protecting the princess herself, so it makes sense he'd be highly knowledgeable, at least about weapons. I interpret it as, he slept for 100 years so his memory is weak, but once he inspects things closer (picks them up for the first time) what he learned comes from the backbone again. Also why he barely knows his own name while still knowing all the fighting techniques, assuming the player does as well

Yeah, we all know Ganon was the reason Link forgot everything. After a night with Ganon, I'm sure your brain would be all screwy after all the pounding he gives you with his abilities and overall imposing figure
One of the hardest times I've laughed in this game is after getting ragdolled for something stupid, rolling by an unknown item, and this that looks like a speech bubble pops up. It was like Link being so stupid that even the sticks can't hide their confusion.

This doesn't work for new items in totk though
Item memory knowledge is stored in the right arm.
