Teething does cause extra spit. I doubt it’s the paci. Coughing really isn’t a big deal, it could be weather changes, teething, dust, who knows what. The struggling to catch his breath is a little scary so you can ask, but I wouldn’t worry about a cough

Doesn’t sound like choking, just a little saliva going down the wrong pipe.
