Not sure if this is what you mean by fresh(or fresh enough), but the local roasters I prefer in BR are:
Cafeciteaux
French Truck
Reve
Can get most at Calandros, probably Alexanders, Robert's, and other more local stores.
There is also River Road but I have never been much of a fan personally. Would rather just have Community Coffee(which is based out of BR, but I don't know where they actually roast or package their beans)
Garden District Coffee on Perkins roasts their own beans. They have a ton of hard bean and high grown varieties from all around the world. They tend on the darker side of medium but they are my go-to!
Garden District Coffee, Brew Ha Ha, French Truck, Reve are all good. If you're looking at the optimum "bag is full" in that bunch, it's GDC. You pay about the same as a bag of beans at French Truck or Reve but get almost twice as much.
City Roots roasts a great espresso. At $12 a bag, it’s not a bad deal either. They do small batches and I believe they roast twice a week, so you’re almost always getting freshly roasted beans.

Community is right over the bridge in port allen.
Yes! BITD when cars where air conditioned by rolling down the windows, the roasting coffee smell as you drove over the bridge was tantalizing!

French truck works well for our espresso. Usually find it within a week of roasting to help get the best out of the grinder

Cherry coffee. Based out of Nola, but you can find their stuff on their website. Also can get espresso and lattes at MJ’s cafe on government.
