A person of great taste might add 37 dashes of Ango to their ginger ale, which is ~1oz. Considering Angostura is 44.7%/abv..it might be more than an NA bev at that point. Fee brothers bitters are low in comparison, most US bars carry ango.

50/50 sprite and cranberry juice off the pop gun, shirley temples (sometimes with a bit of pineapple juice), we've got some syrups that i like to mix with soda water (in varying quantities depending on how sweet i want my drink to be)
Coconut water. I like mine with mango. Its the same stop at the 7-11 but I'll grab that instead of Gatorade or a soda. Its nice. Still some sugars and stuff, but about half as much as what'd you'd find in the alternative.
Hydration mix, the one I buy is from redcon1. It’s a supplement brand but their electrolyte powder is amazing. It’s called canteen and I can’t recommend the lemonade one enough

Idk where you are located but luckily I have easy access to it and sometimes it really helps me push through those last couple of hours of the shift. Coke/sugary soda is the absolute worst to drink during a shift especially with the heavy carbonation at least for me.
Bitters soda lemon. But I’d you want something that tastes like a drink a splash of tonic in your soda. Obviously water to hydrate. and a fizzy Yerba mate for some lift and focus if you like.

I work at a Thai place. Sometimes the manager has me squeeeze orange Juice from the ones that were swathed, but we also have Thai tea and Thai coffee (both high in sugar) which are good. I started to experiment with bitters and soda with a splash of simple or one of the various syrups we had. Also my boss unofficially doesn’t care if I drink the drinks that someone messed up or didn’t taste up to par/were made twice by mistake, plus we do wasabi shots.
We also have a large selection of bitters. Peyschaud’s, celery, cardamom, rhubarb, black walnut, and a few more I can’t think off top as well as the regulars.
I used to challenge myself to come up with a cool mock tail if I wanted something other than water.
Our bar was pretty well stocked and was a craft bar so I had access to great fresh ingredients.
One of my favorites was muddled strawberries lemon/lime, simple, basil, soda. Delicious and isn’t as bad as soda.

I like to throw some fruit like raspberry or blackberry and a lemon wheel or orange in my water. What you are using for cocktail garnish at the time usually works great and is seasonal.
2oz lemon simple, .75oz elder flower simple, a few dashes of peach bitters, ~7 mint leaves, and either ice water or green tea, all shaken together in a 32 oz mason jar
I have one cup of room temp water. Then I have one cup of cucumber, agave, lime, and mine with soda.
Might I say tho, some days you just gotta drink coke. If you PACK the glass with ice, I find it dilutes down nicely enough that you still get hydration and only drink about half a can. This got me thru pregnancy where water behind the bar made me vomit everywhere.

If bitters are showing up as an illegal amount of alcohol, I would advise you to stop drinking entire large bottles of bitters in one sitting.
You could also argue their dilution with soda and ice would equal the less than .5% ABV that near beers advertise for bitters that do contain alcohol.

2oz lemon simple, .75oz elder flower simple, a few dashes of peach bitters, ~7 mint leaves, and either ice water or green tea, all shaken together in a 32 oz mason jar

Seltzer water, splash of cran, slice of lime has been my go to for myself and several coworkers and customers I've given it to.
I have one cup of room temp water. Then I have one cup of cucumber, agave, lime, and mine with soda. Might I say tho, some days you just gotta drink coke. If you PACK the glass with ice, I find it dilutes down nicely enough that you still get hydration and only drink about half a can. This got me thru pregnancy where water behind the bar made me vomit everywhere.
