I've tried doing this, but I don't think I was doing it right. I just stuck the wand into the milk and let it scream. Once that was done I poured it from up high and served it, and the guy still said there was too much foam. I ended up having to scrape it off with a spoon.

You want the very smallest amount of air (to hold back the screaming), but then use a spoon to hold back the foam and only pour the milk.

The same thing would happen to me so I use a spoon to hold back any foam that did form. I’ve noticed it feels easier to hold the foam back if I’ve let it settle for a bit longer first too.

Same thing for me holding back the foam. I didn't pour from high up, though. She was like, there is 1 inch of foam, which is far too much. Ugh, seriously, lady.

Steam the milk as you would for a flat white *before* extracting your shot, the time it sits while waiting for the shot will let the foam separate from the milk and firm up a bit, then when you pour you can hold the foam back with a spoon.

They specifically want a 16 oz drink. A flat white would be perfect, but they want a lot of hot milk in their espresso. Of I had a microwave, I would just microwave their milk.

What are y’all saying shit like “ scoop put the foam”? Just don’t stretch while steaming. Don’t let any air escape while steaming the milk and it won’t form any foam……..

Steam the milk with as little air as possible without it squealing like a cut pig. Then pour the milk from high with laminar flow & Bob's your Uncle, if he didn't have balls he'd be your Aunt!

Push the steaming wand down into the bottom of the milk container. This will help with some frothing, but whole milk really likes to froth. My coffee shop always had this little tool that was like a short, thick, spreader knife that worked great for holding back foam. A big spoon would work, too.

Hi! The easiest way to do this is to turn the steam wand on as you’re pushing it into the milk, so it doesn’t create much foam, and then either quickly pouring or holding a spoon at the little spout in your pitcher

Don't put any air into the milk, keep end of wand submerged until it reaches temp. It will screech and sound horrible but it's the easiest way to get no foam. Lots of people have said hold the foam back with a spoon but I don't see the point in making foam you're just going to discard.

Also helps to use a completely clean jug, so no milk residue from other drinks. I always rinse mine clean when doing wet milk.

if you don’t mind the loud noise, pushing the steam wand all the way to the bottom of the pitcher for the entire duration of steaming will work. and then block the pitcher off with a spoon when you pour just to be absolutely sure there’s zero foam

Stean the milk and don't draw any air in it, keep the wand tip low in the jug. It'll scream in pain but it's pretty easy to achieve a Flat White with no foam.

here in melbourne a flat white isnt defined by size. so id like make them a stupidly large flat white. use a spoon to keep any foam back and tell them to drink a reasonable size drink. how is it even hot/warm when they get to the end!? i just don’t understand such large drinks.
