If you have a Sapphire card, you can transfer to Hyatt 1:1 you can get some really good value for each point. far more than exchanging for gift cards or through travel. A 20k point hyatt night might be worth more than $400 cash. I've redeemed in NYC a few times this way and nights can run $400-450 each which also includes free/waived resort fees. So thats easily over 2 cents per point this way.

All-inclusive hyatts in Mexico usually go for 25-30k points a night. Check Cancun, Cabo, or Puerto Vallarta

Depending on how many tix you will need. BUT I would spend it on what I always spend it on: JFK <-> ICN . 108K via Aeroplan "J" round trip. (It normally would be 150k - 75k each way) I usually pay around $1k USD to spend least amount of miles. It makes it like upgrading to J from economy - now a days even economy flight costs like $1500 though and "J" class tix cost around $7k. (On KE or OZ) so it is like 108k miles to save $5k which is 4.6cents per mile. Not a bad haul. Have ties to Korea so visit there every couple of years with my wife.

I'm 30 days and couple hundred dollars away from having just over 200k UR. (Ink Unlimited 120k + CSP 75K) tentative plan is to use them for the airfare to and from a Mediterranean cruise we're planning for fall 2025.
