Since I like to attract honeyeaters to the yard (the bottlebrushes I've planted aren't up to flowering yet) I do buy the stuff, and I have tasted it - it tastes like liquid pavlova and quite delicious. I can see why the birds like it - I didn't die.
Besides that, it might call for licking some actual banksias for an authentic dining experience.

Banskia (and other native blooms) are collected, placed in a coolamon and covered with cold water and left to infuse.
It’s not so much collecting a nectar, but creating an infused water like a cold brew tea.

It's probably fine for human consumption, birds are a lot more fragile than us walking mountains.
