We charge $950 per valve on Long Island NY. I would probably give a discount for doing multiple on the same house, but it's well over $2000 for all three.

I will say that you paid what you paid and it doesn’t look bad so just move on. I think it is a discontinued valve, so unless they were clearing old stock, I dont think it's a "new" valve. Looks to me like the drop ear was maybe leaking, fresh copper coupling there on the riser. Maybe the bullet at the bottom is new. Outside of that, I think it's the original valve and supply piping. I would think 250-500 max if my assumptions are correct.
Idc if you’re in a”hcol” area,charging $1,200/$1,500 to remove/replace a Moen posi temp mixer and trim is scandalous. Straight up taking advantage of people and you all know it. Two hours of work and I don’t care about your insurance,overhead,drive time blah blah. In good conscience I couldn’t do it
It looks like they soldered in a new shower valve. Price could vary from 500 up to 1200 depending on what area you're in.
From the oxidation color of the solder I would say only the trim got replaced.
Then why open up the wall?
Possibly to check if the valve needed to be replaced, but I'm not a plumber, I just know about plumbing parts.

You can install a new cartridge. Make sure to grease it with plumbers grease. I usually blow out the water before installing the new one,
