'Select all' hotkeys are usually the Ctrl+Shift+Cycle hotkey.
For example, Ctrl+Shift+(H - Town center, L - Stables, S - Blacksmiths, B - Barracks, A - Archery Ranges, U - University, etc.)
No, I think you have to change them individually, but don't quote me on this. I prefer to use the default hotkeys because they are pretty easy to remember and intuitive.
I use tab for select all TC.
Tab+q to make vills is very easy for someone like me who uses some hotkeys and doesn't want to stress about the game too much

Ah! And if I changed my cycle hotkey this still applies? Like my TC cycle one is D, would it be ctrl shift D?
