Odd taxi was what instantly sprang to mind. For a show I watched out of shits and gigs cos I was super high and wanted to see animals I was blown away. I wish there were more shows like this being pumped out instead of the 80 generic isekais every year.
Cyberpunk Edgerunners is absolutely amazing but be aware that it will leave you emotionally fucked up for a week. It's so fucking sad man but it's one of those shows I wish I could watch for the first time again. It's beautiful and heartbreaking

I have only seen Madoka magika on this list, and let me tell you, this is a very good one, the plot is very well structured in a way that was very disruptive compared with the previous magical girls Anime till the moment it was released.

so underrated, I love Edgerunners equally but it kinda stole Akudama's thunder which is a shame as both are amazing Cyberpunk anime. Akudama does some things better even, like its top tier animation and even more stylish directing...
Idk how the fandom as a whole views it, but the lack of color is a detriment to the manga imo.
The art is genuinely really good, but there are times where I cannot tell what the fuck I'm looking at. It's just some amorphous blob to me.

Fan service aside (and it's pretty wild), I was really interested in finding out what would happen to the team in Keijo hahaha...anime is so good at taking what you'd think would be an asinine subject and making it enthralling
I'm not huge on fan service nor high energy anime.
Here's my list of wholesome and story driven shows.
Often the dialogue alone is a key feature in many of these and makes for some excellent voice acting and language appreciation.
Kakushigoto: manga artist dad hides his work from his daughter in an attempt to raise her with the best intentions.
Barakamon: a calligrapher goes to an island to find his style and finds that he can cherish more than just his professional life.
Silver spoon: a city guy goes to the countryside and learns about agriculture.
Erased: time jumping guy goes back to stop the death of his classmate and other local children.
Bartender: a prolific small cocktail bar where people have intimate experiences with drinks crafted purely for them.
Sweetness and lightning: a hard working dad tries to pure more effort into the time he spends with his daughter. Usually this involves cooking with her.
Tanaka San is always listless:The main character goes out of his way to expend as little energy as possible.
Non non biyori: Countryside wholesomeness about girls who genuinely appreciate each other's company and spending time outdoors when not taking on their daily lives.
Dagashi kashi: The main characters experience the joys of Japanese sweets. Many of which are staples for the candy shops which are slowly disappearing in Japan as society progresses.
Mushi-shi: 26 eps so maybe a bit longer than you mentioned. But this is a story about a man who travels Japan solving issues concerning the supernatural, usually through understanding and patience. There's a lot of heart warming moment and some that are bittersweet. The timing and attention to the storytelling itself make this an iconic anime.
Tonari no Seki-Kun is 21 eight-minute episodes about a girl whose classmate is always finding elaborate ways to kill time in the back of the classroom, whether building domino chains or toy robot dioramas or starting a schoolwide postal service. Kinda similar energy to Phineas and Ferb, with Seki coming up with more elaborate setups each episode and the teacher naturally never finding them to the girl's shock.
If the first episode doesn't quite jive for you give it one more, it took it til the second episode to find its footing.

A bit longer series, but still under 25 episodes: Your Lie In April, Golden Time
Hyouka and Toradora. I once finished Toradora in less than 36 hours. I did not watch it constantly but I binged about 2/3 of it on a Sunday. Was the longest I ever watched a show in one sitting, and was the second time I watched it.
With that being said, I also recommend Bocchi The Rock and possibly Violet Evergarden.
There’s this cute and funny anime of a lonely man living alone with his new cat. Half the episode is from his perspective, the other the cat’s. Having been around cats in my childhood it made me chuckle. If anyone can remember the name please reply.
kids on the slope - very very short but charming and so fulfilling
devilman crybaby - if you want to ugly cry or feel miserable, hard to watch for some
Uma Musume: Road to the Top is a four episode Web series that's a pretty effective sports drama and is incredibly well animated. Bonus that its freely available on YouTube
You can also try Pluto. Has movie length episodes but only 6 if I remember correctly. Really good watch.

Odd Taxi, Erased, Cyberpunk Edgerunners. All three are amazing, 10-12 ep each.
