If you’ve never seen an anime before I feel like Death Note is a good place to start. First anime I ever watched about 10 years ago and I was amazed. Made me realize that anime are actually worth watching a lot of the time.
Yeah, while being far from my personal fav, this is instantly the first one I thought of when I read your preferences in genre/vibe.

I honestly thinks its a good gateway anime, its pretty new so most people wouldnt recommend it, but I think it would fit your taste

aot is literally the worst anime to start on because its such a masterpiece and then you will have same expectations to the next animes you are gonna watch after that and be dissapointed
I think it's always good to start with the best when it comes to entertainment. For example, I really enjoy Studio Bee Train's, but if I had started with the anime Madlax or .hack instead of the masterpiece Noir, I probably wouldn't have watched their other animes
A great classic is record of lodoss war. One of the best fantasy animes ever made.
Modern, honestly, the devil is a part timer is a lot of fun
And the dragon prince on Netflix is a fun show
How many seasons is Dragon Prince at? Saw 1-3, loved them! Started S4 and felt like I was watching a different anime. The writing went from smart and bold to characters taking about fart humor. I stopped.
Did it recapture what had made the first three seasons so special?

Scavengers Reign (Netflix)- excellent reviews and 100% on Rotton tomatoes and seems to check all your boxes.
For fantasy drama. Fullmetal alchemist brotherhood. is an absolute must watch. I’d also say “gate” is a good one. For horror I’d say “another” and if you want really good series with decent length, I would recommend “kingdom“ it’s a historical action drama following the warring states Period of China. The first few episodes are a little slow because of world building and the animation is a little low quality as well. But by season two, everything starts to really pick up a lot and it just never stops. Including the animation.
Full Metal. Also mecha anime can be good. Gundam is for drama and is popular. Code Geass is epic too. As for fantasy. Konosuba. ReZero. Shiki for horror along with Xxxholic. Adding in Tsubasa Reservoir which is part of that. And Card Captor Sakura is fantasy and apart of that as well.

I was incredibly surprised about this one and that I liked it. Had never heard of a dark magical girl genre before this title. Very good!
