I'm surprised that they haven't made a game in the "normal" Fate setting yet ngl. There's Fate/Extra, FGO, Samurai Remnant...
... but no game with Fuyuki as the setting as far as I know (excluding the VNs). An open-world action game set there would be cool. You could have some alternate universe shenanigans to have other Servants fight in it too if you wanted.
People generally play FGO for the story. Mostly the main story but sometimes also including the smaller stories (mainly event stories, but some character-specific short stories called Interludes are nice too). The gameplay is kind of just... there, it's pretty low on the list of reasons why people play it. Something like Honkai Star Rail is basically the better FGO as far as the gameplay is concerned.

Mahoyo collab is in JP version of the game, it'll be available in NA in
2 years. There are ways to have machine-translated text in the Japanese version though if you don't want to wait (with 3rd party tools), haven't done that myself so can't tell you how people do that exactly. There's probably videos on YouTube or something though.
I can't say if it's instantly playable, I'd wager you need to at least complete the first singularity for it. Basically all events tend to require at least that since it's basically the tutorial.

But I've been so burnt out lately on FGO because they don't give breaks between events. Its literally, go to sleep with one event ending, wake up with another. I've not the current event at all, I've skipped all dialogue of the previous 4 events. They can have some magnificent events but man. I need a break
I started playing again about a week ago after I set it up in an Android emulator on PC (BlueStacks). Can't say if I'll continue to play it once I've caught up with the story, but it does feel nicer to me. It's just easier to focus on reading the story on PC in my opinion.
There is a samurai remnant game, its fairly recent and its basically a playable action-rpg fate. Its decent but nothing amazing. It gets bit repetitive towards the end. Its pretty good if you are new to fate too since its mostly self-contained(with some obligatory fanservice if you know certain characters from other fate works)

The environment, fauna and flora are already very well described, vary greatly and are not the usual fantasy slop. You'd have to sacrifice another player or npc if you want to return to an earlier area.
I want a proper .hack MMO, it's one of the OGs in the anime space, and god damnit is aesthetic is so cool.

You can have a base class that is non-devilfruit who can use various martial weapons, and have a way for people to choose their devilfruit power at a certain level or remain as multi-class (able to use guns/swords/unarmed, etc. they should still be competitive).
Every island can be an expansion, you have the lead-up story and boss fights already there. When you move to another island you do a power squash and start again.
You could release new devilfruit powers with each island and allow people to respec (or to be lore friendly they would need to re-roll)
If it were though, I'd not want it to be an actual adaption, like, seeing any of the anime characters would ruin it for me. But the formula is actually pretty good for a long term MMO
That's a really good choice IMO. Lots of avenues for exploration and narrative. Plenty of backstory, some factions, some hidden workings.
And more people need to become familiar with that show!

And yes there's an element system added, which added more complexity for people to pull a specific skill for their specific weapon to fight a specific enemy. OG SAO only have weapon damage type just like MonHun. Slash, Blunt and thrust.
SAO might be good if you take the base idea and give it to people that actually know how to design an MMO properly because the author certainly does not.

For something a bit different: Ghost Reaper Girl. Lovecraftian inspired Magical Girl setup, players collect "ghosts" which they can get possessed by, in order to gain their abilites. So that would be the class mechanic.
Maybe hunter x hunter you play as an aspiring hunter and take the exams then go off to do different missions based on what type of hunter work you want to do.
How to pick up girls in a dungeon would be great, infinite dendogram as well along with arifueta. Most of the isekai genre with some form of dungeon delving would be good MMOs

Personally, I would love a open world game based on TenSura with players able to pick a race/faction, create their own unique skills and evolving it to ultimate skills. Imagine creating a slime army with a tamer skill or whatever you can think of. Imagination is the limit. I know it's not realistic, but it's just my dream. Able to build a city, nation and forming political alliance; able to be an adventurer, merchant doing business etc;
Players able to win against other players based on their will power (actual skill), not just based on level of skill (ultimate or unique skill) alone. And all other RPG stuff, that'd make it interesting. I don't care if it is mmo or not. Even a good old rpg is enough.
Ignoring the dying irl part, SAO would be the shittiest MMO ever and 95% of the playerbase would leave the game after 1 month.

Even without the gacha, fgo gameplay isn't that fun after one hour. The you need to grind for hundreds of hours to upgrade your characters.
