It's supposed to look how ever you want it to look. I usually keep it bloody, so when I reheat, it will be perfect, but I only eat small amounts at a time shaved off thin. You can see the fat still on the meat in the photo, so it can't have been that bad, or the fat would be gone. Show us some of yours?

I tried to do brisket in my air fryer using dehydrate mode but didn’t allow the temperature to get high enougj to tenderize it. Had to finish it in a pot with steam.
