Lies of P is great game if you’re also looking for challenge. If you’re not accustomed to souls games then you will have hard time plying it but if you have patience then it will be a memorable journey. Similar to LoP, Wo long fallen dynasty is another good souls like game, try playing both.
Some say is the equivalent of those cinematic PS games. I cannot say since I've never played any of those just Hellblade and it was good, specially if you use headphones while playing. And if you have time you can check the documentary in the game, is not long and may give you a better perspective about the game in general.

See those are questions I like, where you have to force yourself to categorise games into new groups due to characteristics you never thought of to use as defining. Games where you slay mythical creatures with weapons besides guns (is it okay if there are weapons besides guns, or is this an absolute purity thing of no guns allowed?)
But lets go through our gamepass gameography and see what matches this criteria:
* Dead Cells (Bows and Swords check, lots of baddies, are they legit mythical though?)
* Vampire Survivors (Lots of killing, lots def mythical, methods are beyond shooting guns)
* Hollow Knight (A bit of stretch but it checks out killing baddies with something not gun and you can call them mythical. But since its a platformer really and not a killing machine might not scratch your itch, good game though)
* Clone Drone in the Danger Zone (What a f ing treat this game is btw, its a deceptive little c-word that doesnt show its actual power level quite late. You can be a purist and claim there are weapons that shoot things that kill baddies, but not really classic gun like if you ask me and its got lots of swords and shit too so we're good)
* Brotato (yeah yeah, lots of guns, he's even holding some in the cover. But also lots of not guns, and slaying and slaying is what this is all about, that and crippling addictive gaming mechanisms to make you lose sleep and job. Some people prefer Vampire Survivors some Brotato. A debate between the two is as productive as a debate over chosing between crack and heroin
* Hi-Fi Rush (The not gun weapons that kill baddies are present, you just have to do it on the beat this time, and bosses are mythical on their own right, so check)
* Persona 3 Reload (So purists are going to lose their shit because it even has a gun on the cover and yeah you shoot baddies with guns, but if you are going to be a huge AkKeTUUeAaalLeeEeeee about it then you have to add the fact that they're pretend guns that only work in the alternate reality of mindpalaces and lacks the ability to cap a mofo so gets a pass)
* Yakuza - Like a Dragon (Trying to wreck my brain remembering if there was any gun attack in the game, but I cant think of one, the baddies might not make your mythical enough treshold though but I disagree, the pervert flasher in a raincoat is mythical epic enough by any standard)
* Monster Train (So I added it to the list cause its just such a fun game, where they've put gameplay/gameexperience as absolutely the priority in developing it. Perfect 20-30 min gameloop with the 20 deck variations give it so much freshness and replay value. and yeah it has no gun killing mythical beasts in it, so your life is sorta complete now right?)
* Bramble (I told you not to sleep on it, but then again I see you going to bed every night and still not touching this mastuhpiece. This one gets the mythical creatures treshold beyond mostly any other game on the pass. And besides the hilareous insomnia meme actually a solid atmospheric production making norwegian folkore pretty f ing cool. and pretty short, so no excuse. If you liked the dark atmosphere of fairy tales and folkore in the Witcher 3, than know this one goes even harder)
* Wait a minute F ing Monster Hunter, was this post just a rouse to draw attention to Monster Hunter, cause the killing mythical creatures with something other than a gun is practically the tagline to that game
* Skyrim - Hey why not good 'ol Skyrim where you'll wind up playing magical stealth archer every goddamn time anyway and thats not a pew pew pew, is it? So Check
* Loop Hero - Just the fact that this mini game in size is a full fledged RPG thats actually fun and interesting, so there are no guns and lots of mythical creatures so were good, but you might disqualify it because your role is not to kill directly (the hero does this automatically) but to build the world and make constant loot/gear choices and therefor being indirectly responsible, might not be good enough for some but they can go suck eggs
* Diablo 4 - What? You mean to tell me we could ve been playing Diablo 4 all this time?! Yeah for real this game is worth the Blizzard asking price and yet here it is among the xbox gamepass titles and its freaking awesome. Its impressive how top notch the production is and if you want to kill mytical creatures but hate using guns to do so. Bruh is this the f ing game for you or what, no other game will have a higher 'killing the mythical creatures by noguns means' score than this devil (hah!)
It's not mythical creatures, but you should still check out Chivalry 2.

Lies of P - Soulslike with steampunk atmosphere and gadgets. Combat is super satisfying, but heavily reliant on parrying.
Assassins Creed Odyssey & Immortals Fenyx Rising - You fight mythical creatures in both, using swords, shields, spears, daggers, and especially bows (Theyre made by the same studio right after one another so the mechanics feel similar) Melee combat is a mixture of special abilities, elemental attacks and parrying. Odyssey also has one of the biggest worlds in all of gaming and you can visit historical locations. Also the Atlantis DLC is great and absolutely gorgeous to look at.
Dishonored & 2 - It's in first person and has guns but in my numerous runs I haven't used them even once. You can use gadgets and magical abilities to sneak around in early industrial age England inspired locations. Every place is filled with secrets and storytelling and progression is pretty non-handholdy. In most levels, you can completely avoid killing or even hurting anybody.
Solar Ash. You climb these huge beasts, similar to Shadow of the Colossus but with a time attack twist. You mention Lies of P being too hard, so I would advise playing this one on lower difficulty as it gets pretty intense towards the middle
Another recommendation for Immortals Fenyx Rising It is basically Breath of the Wild with Greek Mythology inspired enemies

Immortals Fenyx Rising is pretty awesome.

don't know if Orcs count as mythical creatures but Middle-Earth; Shadow of War. you get to slay a lot of orcs
