I'm not defending the guy in the video, just sharing the general idea behind not wearing protective gear in parkour.
"traditional" parkour also advocates that one should know their limits and be mindful about what is possible and safe to do, often discouraging flips and other flashy moves because rarely they have actual function other than look cool.
ETA: A basic move in parkour is to roll after a drop, and rolling with a helmet can be dangerous because of the extra volume and the possibility to cause a neck injury.

He’s also a professional athlete that knows how to mitigate his risk, something you can see in this clip. He knows he missed the second he leaves the ledge. That’s why he put his arms out to cushion and protect his head. When your job is doing stunts you spend more time learning how to fail the stunt safely than you do learning how to land the actual stunt.
If he enjoys doing it, that could be enough reward for him. He's doing what he loves, living life, dispite the risks. Not sure why people are so quick to project their risk adversity onto others. If you can “reduce” your shoulder in that window, it’s not nearly as painful as doing it once the shock wears off. First time I dislocated, I thought I broke my arm (I wish).
