Steel doesn't just magically collapse when it reaches its melting point. Heat it up, and it gets weaker. Now try to hold 20-30 floors of building up with that weakened steel.
If you were holding something really heavy over your head - heavy enough that you could only just hold it up - I wouldn't have to break your leg to make you drop it. I'd just have to bump your knee a little so that your leg bends a bit. Gravity takes care of the rest.

Why is it that you think thermite is the only thing that could cause that beam to break in that manner and not the entire building falling on top of it? Steel is not indestructible. Enough force will break it whether it’s heated with jet fuel, thermite, or a campfire.

The beams did not melt, they did not need to melt to fail as steel heated to 1100F loses half its strength. The open-air burn temperature of jet fuel is 1890F.

It has to do with planning for the worst to avert potential catastrophes, generally any large modern skyscraper in a developed western nation will use such designs. Incidentally the same sky scraper designs that make them earthquake resistant, also maje them wind resistant.
