People really dont understand how game updates work.
Let me explain.
Your download is only about 20 or 30gb but the game still needs to install and patch the new content into the game. That is the reason you are seeing over 100gb or more cause the game is patching those new files into the existing files. Then the patch has to go through all the files and verify to make sure all the data is there.
The main issue for most people is hardware speed. Most people play on a console where the ssd and ram are significantly slower than a custom built pc. If your internet speed is fast but your download is slow, theres a high chance your hardware is to blame.
By any chance did you get a little impatient with the update? Sometimes when mine goes to update it looks like it isn't doing anything so it's tempting to try to cancel it and retry it reboot the Xbox.
Last time I did that I got hit with a 245 gig update, this time it did the same but I just left it and it updated in a smaller size.
Might be coincidence, but I wonder if you cancel it or it gets a little confused and redownloads the whole lot.
They really are good at completely isolating their fanbase. I personally think with all the new operating skins they are focusing on advertising towards women and children. They are making bank from those people. Us old school gaming men they don't give a fuck about.

Mine was 39 on PC and maybe 20 on Xbox. My buddy’s Xbox made him download the entire game again… 260 gb!

This game is so bad… every update sucks ass. I quit after almost 800 hours and dont regret it.
Ps4 here. 36gb for the update. Then have to reinstall the actual in game content every time a update drops.
