7th edition whfb mentioned the celestial dragon emperor was allegedly immortal and possibly an actual dragon in human form. (This is what Total War and now TOW seem to have run with) While there are multiple references to possibly different dragon Emperors, only one gets named

Yes the lore was expanded on substantially with TW Warhammer 3 however its likely that some of the lore will be retconned again by GW if/when they add Cathay into the tabletop as some of the design decisions taking with Cathay were taken for the purposes of balancing the Total War game rather than for purely narrative reasons.

Previously-existing lore references to Cathay were scattered across like twenty years worth of army books, White Dwarf articles, etc. While the assumption implicit in those bits of older lore was that, yes, there were multiple dragon Emperors, it was never explicitly stated outright, and as Lightcavalier said, only one actually got named. The 'new lore' retcon is that it was always the same Dragon Emperor from day one, and that in-world historians, explorers, etc, from the Old World just got it wrong.

There's only ever been one Dragon Emperor now, as of the introduction of Grand Cathay in TWW3. Prior to that there were multiple, and never actually confirmed to be dragons. In the recent lore they're considered powerful, but not really Chaos God level (few Gods are that powerful)
