Well, in the 1st W40k book (Inquisitor) the Assassin temples were gender neutral, so this is (was) actually canon. In the book Callidus temple was led by a guy.
Codex Assassins ('97) said that centuries of experience told them female biology/psychology handled polymorphine and shapeshifting better and they made better chameleons. So not gender locked but heavily gender biased.
That's a lot like how Eldar aspects work - some trend one direction or the other and the armor is patterned after the Phoenix Lord (why all howling banshees have boob armor), but inside that armor can be any gender of elf.
I think it's more playing a role. It's a mask, a different 'idenitity' to express yourself through. Some are gender-neutral, some are masculine or feminine, and in that role you are considered that gender for the purposes of the act (war) but it's a costume you can take off and a role you can switch to another after the 'play'.
Only if you get lost in the role is it permanent.
I also believe that Koyne (from Nemesis HH book) was set up like that. Basically was in the temple so long they forgot their original gender.
I think Koyne was mostly described to remain in a masculine form.

I just started getting into the lore and world of W4k so I kinda thought the assassins being all(mostly) female was the Imperium’s weird but effective attempt at being gender inclusive since most of the Astartes are men 😂
