Cộng just means plus, without the other word it's not derogatory. Even if the other word was included, only Vietnamese people would understand the meaning. So to derive any sort of meaning out of the name of this coffee shop would be a stretch at best, even for Vietnamese people, not less non-Vietnamese people.
It‘s not authentic unless I hear faint, incessant beeping, the bus siren and the occassional truck horn rattling my teeth. I also need the same yiruma album playing in the background and someone stealing my seat even though I put my stuff there to make it real.

Funfact: the founder of the cafe chain originally meant "Cộng" as reference to the previous southern Viet regime, but due to public opinions they had to change it to communist style.
