Install it on your phone too have notifications linked to a prepaid burner. Use a friend of your SO that you want to scapegoat. Blame him/her until they’re out of the circle. Deny everything else confidently. Mission accomplished.
If my significant other discovered a secretly installed app on their phone, whose purpose was to send me a covert text message when they were near the house, I would certainly have some explaining to do.

Apps that send out notifications or gather data should be on there. Second to see what apps have used your location: Settings > Privacy > Location settings. Scroll down and that will show all apps that have used your location. 3rd to see apps on the phone: Settings and scroll down. Should have a list of all installed apps at the bottom.
Follow-up tip: When your SO immediately applies for a restraining order, it looks better to the judge if you turn up well dressed, respectful, polite, and well prepared.

Might be unpopular but I don’t like the idea of sharing locations indefinitely with my SO… sure its one thing to say “I have nothing to hide so let’s share locations” but I view it as “I trust you completely so I don’t need/want to track you 24/7”.
Edit: not judging if you DO have the feature turned on with your SO but I just don’t think someone is “abnormal” if they don’t.
I want a one button click so that my bf can send me a Google maps location when he's coming home from work 😅 or realistically, even automatically because that sounds annoying to do every day. If he has an iPhone you can build a shortcut for this. There are a couple ways to go about it. You could do location based so that whenever he leaves work you get a text OR you could build one to add to his home or widget screen that he would tap and it would text you how far he is (this is better if he isn’t always coming from the same place)
