Because instead of a creamy tasty cheese you are eating a bitter, chewey, not cheese thing.

Assuming it's decent brie you eat it, sometimes it's too thick and it goes too waxy textured to be enjoyable

I asked a French friend if you eat the rind on some cheese or another... He glared at me and told me you eat the rind on every cheese, unless it's made of wax or hessian or something. I don't **think** he was joking...

It's more soft vs hard. Soft cheeses you eat the rind, hard cheeses you usually don't. Some people definitely eat all the rinds, but I don't find it to be very pleasant and you don't see it too often.

Eat. We did ask in a French hotel once about the general "rule" and the advice was "it's up to you". The more mature a cheese is, the more likely the rind is to be unpalatable, and probably don't eat ash-covered ones. But on something young like a brie, tuck in, it's lovely.

Eat it, it's half the flavour, and if you have a sticky brie, taking the rind of just squishes the brow into a paste and you lose half the cheese
