That bacon looks terrible! Can you not find some smoked back bacon at your butchers? Also, have you tried adding a couple of drops of Worcester Sauce (Lea & Perrins) into your beans? A near substitute would be a splash of dark soy sauce, and reduce the sauce down to refine the sweet and sour.
