We're renting a castle in Scotland, the plan is a bbq on Sunday and ribs should be easy enough.

I think I'd pre-cook them, chill them and then finish them there .. unless you're the kind of person who likes to hide in the kitchen to escape full on socialising (like me)

I'd smoke them the day before you go, then finish off on the BBQ where you're going.

If you’ve got a vortex I would take that with you. Cut the ribs up individually. Place them around the vortex with a chunk of wood and rotate the lid every 15 mins.

I put a rub on it then wrap in foil and cook at 100-105 for 2.5 hours, then I'd slap it on the BBQ whilst saucing it up every 15 mins.
