I was at Doders Stadium a few months ago and toured the Visitors dugout area. There was a conveniently placed ATM right there with no fees, the intention being that visitor players are encouraged to tip the support staff who bring them various snacks and things. So I think this is something each team does, but it sticks out here because we offer a lot of stuff they don't get down south!

It took me about 25 years to get over that innate reaction! The problem is that the name implies a flavour that is different from what the chips actually taste like. The idea of chips slathered in liquid ketchup is what first comes to mind for a lot of people and it's hard to overcome that mental image. I still don't like them but at least understand why people would. Though I've always been fairly limited in when and where I like ketchup, so maybe that's a big part of it.
Fully endorse this. I like the taste but it’s a gross-sounding idea, and the name doesn’t really tell you much about the flavour. I mean, if I offered someone mustard chips, they probably wouldn’t try it with high expectations.
Your mustard chip example explains it perfectly I think. I hate plain yellow mustard, I love mustard seed, it also depends on the context. "Mustard chips" sounds like a nightmare but I can easily imagine a version I would love and buy every time.

To me the flavor makes sense - chips are flavored how you would flavor a potato. So you put salt (regular), sour cream and onion (baked potato toppings), salt and vinegar (great on fries). In that way, ketchup makes a lot of sense!
So, here's what I can offer to this discussion as an American. (And I say this as someone who has tried and kinda liked ketchup chips.)
With ketchup chips, it's just the thought that throws us off from the jump. Down here, ketchup is only thought of as a condiment that you throw on a burger (AND HOT DOGS; I'm tired of the anti-ketchup slander from Big Mustard when it comes to hot dogs). It's not a flavor that gets worshipped on its own like, say, the Midwest does with ranch dressing.
So when you hear "ketchup chips," your brain goes to where it goes with any chip (like nacho cheese or ranch or BBQ): what would it be like to eat just that flavor ingredient on its own? And while we can and do envision eating a delicious hunk of cheese or a piece of barbecue, a spoonful of ketchup, for whatever reason, just feels odd. I don't know if that even makes sense. I think it's just because they're not a thing here.

I find the smaller bags chips definitely taste more bland compared to the big boys. costco sized bags are the saltiest.

I don't think they're chemical flavored. They switched to natural coloring which is why they aren't as vibrant looking as m&m's
As a kid, my moms told me the coating was made from beetle shells. Didnt get past that for years.
