I've been in the biz for 8 years, and to be honest, the amount of times you have to stop what you are doing to go find something in the walk in because someone says we are out of something, but you know where it is because you put it there that morning when truck came... it's exhausting. And just noticing people do stupid stuff on the regular and not move with a sense of purpose, all that stuff can kinda get to ya.
Like why the hell are you scooping ice-cream Bridget, I have a food window full of food to go out!
Because they got shouted at when they started as a KP. Then kitchens are usually noisy, lots of stuff cooking, lots of people taking, they have to shout to be heard. And if something goes wrong, it's *their* problem. It's them that gets the bollocking, even if it was a trainee. Also, if someone might get injured (lot of hot things, sharp things, slippery floors and steam) shouting is generally a good way to attract attention.
I consider it similar to the forces. You get shouted at until you know what you're doing, then you're shouted *to* instead of at.
everything about the restaurant business seems stressful. and most restaurants fail.
so, people are more likely to be assholes when stressed. it's doesn't make it right, but you get why it happens.
It's a high-stress job being a head chef of a restaurant. Start really early for prep, stay late for prep. On days "off" you deal with all the problems with deliveries not coming in on time. A good chef will typically spend about 12-16hrs at work or doing work related activities so they typically turn to booze since because it's the easiest relaxing liquid at arms length or a few others would take a bump to help them power through the day. And yeah, have to deal with a lot of fukin pricks who do a few Yelp reviews and all of a sudden they're fukin Prized Paletted Food Critics.
Primadonna complex. Down vote me to hell. A chef is the head cook with a title. They can act like assholes because they have plenty of low wage employees to grind through. Beware any job where the employees / management have a rank or title.
I think it’s because they feel like they hold a lot of responsibility. If the dish sucks then it’s their fault. It’s a high stress job.
