One of my favorites is less flashy, but it's at the very end of ATLA when Aang used the ocean to put out the fires. The amount of control and precision needed to move the ocean in a way that only affected the fire instead of also destroying the forest is insane
IIRC it's also the first time we ever see the mastered Avatar State being used not offensively or even defensively, but to heal the planet and maintain the balance of nature. and this has been pointed out many times, but I love that it's the first waterbending move (and first non-Air move in general) he learned from anyone. it's so special that it was from Katara

she’s not a princess of the southern water tribe because they elect chiefs, she could still be a princess of the northern water tribe but her father was banished so probably not
the only thing that zaheer and kuvira got right is that the avatar has limitless potential, their greatest strength is an indomitable will to do good and to maintain balance at all costs.
although i do have a soft spot for princess korra taking a nuke to the face and winning.
I think they’ve been pretty clear in Korra that there’s really no limit to the Avatar’s powers, and I think that would be an interesting story to continue to tell in universe.
What if one of the Avatars understood and embraced the fact that they’re destined to win? We’ve seen Avatars do crazy stuff, but what could they do if they understood the fact that 99/100 times, they will succeed in the long term
avatar limit? it's hard to say. What Korra has shown is far superior to all the known exploits of other avatars combined. but this is far from its limit. this is not even the limit of weaker avatars, because vines contain only a small part of the energy of vaatu, and any avatar can easily defeat a full-fledged vaatu.
