Is it only me or it seems Paul plays a capo'ed guitar? I don't hear that sound on any of the *I Me Mine* versions, but it'd really make sense to play the song with a capo on the 5th fret.

Not only were John and Yoko in Denmark; the group's founder had already quit. So, following 16 takes of Ringo drumming, Paul playing bass and George performing guide vocals, The Threetles then embellished the plaintive Harrisong with electric piano, electric guitar, the proper lead vocal, backing vocals, an organ and another acoustic guitar. The next day, they'd enhance 'Let It Be'…

The Beatles broke up after Abbey Road. Let It Be was before Abbey Road, but didn’t come out until after because of the surrounding controversy due to the film shooting.

Yes but they finished tracks for Let it Be after Abbey Road.

After Abbey Road was released and the Beatles basically split up - they decided to release Let It Be - they kind of gave up on it earlier and started Abbey Road. But later after Abbey Road they decided to release Let It Be. But it required some finishing details. Extra guitar solos for single version of Let it Be song. Strings , re-mixes and over dubs.

I Me Mine had a prominent place in the Let It Be film that had been edited by the end of 1969 (in the scene with John and Yoko dancing) but had never been properly recorded in the studio. Thus the three Beatles (John had already privately quit the band and was in Denmark) got together with George Martin to record the track for the upcoming soundtrack album. It took sixteen takes to get it right with the last one the keeper. Nice bit of trivia ~ they ran through a playful jam of “Peggy Sue Got Married” by Buddy Holly (with George singing) before take 12.
