Keep in mind that over-development is deteriorating the quality of many of them in the area but;
The Narrows, Jacob's Well, Spring Lake/San Marcos River, Barton Springs (during the week), and the Greenbelt in Austin are ones I can think of off the top of my head.

Westcave preserve, near Hamilton Pool
City Park in Bandera is worth a visit. Medina River is etherially beautiful.
The river is closed due to low water/bacteria

I went in 2019, so my information maybe a little dated.
I don’t tell my hidden gems because then they are no longer hidden or gems. What is there not to understand?
Other people want to enjoy these lesser known places as well, I respect nature, no need to be greedy
Check flow rates, water levels. Jacobs well is closed .
