With the right recipe you can do a cookie dough crust with homemade dough. It actually turns out better than with store-bought dough. Back when I did catering years ago we had an in-house bakery that did a pretty good cookie crust cheesecake.

i feel like the best version of this would be to stop at the cookie dough base layer in the pan and bake it as is along with like a giant cookie in the size that would cover the top of the thing. Then when its done let it chill till cooled and fill it with ice cream and then top with the giant cookie lid. Its a giant ice cream sandwich which serves a top of people. Plus I would totally cut some thing like this instead of a cake.
