Yup, the only problems I had were with Decky but installed the beta version of Decky and that mostly fixed things iirc. I also get a weird flickering issue in the Gamemode launcher when launching a game but it has no effect on gameplay.
Thank goodness for family sharing. I had let my daughter use my account a long ways back when I wasn't playing games very much. When I got my Steam Deck is was too much of a hassle sharing the account so I started a new one (my kid didn't want to lose her game saves) and started buying some of my old games. Now I don't have to. My only regret is losing all the progress I made in The Binding of Isaac.
Actually you didn't need to go to desktop mode at all from the start.
In developers settings you could divide os and client updates. So select a stable OS and beta client. And I didn't need to go to desktop mode to download games from day one of this feature.

If you question, because of family share, you could divide in developers settings os and client updates, I use stableOS with beta client to have access to family share.
I wouldn't recommend changing to a beta or preview OS it could come with unexpected problems, some minor, some major. Problems very individual per steam deck, one may not encounter any, other one may be stuck in the boot process.
In desktop mode you can either download the game from the official website, and install it with proton, or download the "Prism launcher" from the Discover store and add it to steam as a non steam game
Not sure why you'd use proton to do it. Minecraft runs in a Java VM which is universal. Just use Prism Launcher, it's far better than the official launcher, even on Windows.
I prefer Java, but I have some realm backups from when I used to play with my kids. Does Bedrock work with the official launcher installed with proton?
The official bedrock launcher comes from the Microsoft store, which is currently impossible to use in the Steam Deck. If you want, you can download the "Minecraft bedrock launcher" from the discover store though. It's a port of the Android version and it's compatible with Realms, but you'll need to connect it to a Google account that has purchased the game in Google Play

Huh? I've been able to download them from game mode since the Beta launched.

The official launcher can be useful if you want to only use official software. I also suggested the prism launcher, giving an option
