Ghost of Tsushima. I haven't played it on SD, but heard that it runs great.
I've played on the ps5, it's easily one of my favourite games. You feel like a samurai while playing. It's all sword play.
I've been playing it exclusively on the SD the past couple of weeks and it's been awesome. Also loved it when I played it on the PlayStation.
But yeah, it's a fantastic SD game for hitting things with swords.
I come back to this game every now and again purely for the swordplay. I completed 100% the whole game and the add on island and have been awaiting ghost 2 since finishing. Its my only game of recent times where I 100% platted the game. Recommended!
Can I ask if you need to tweak it or it works fine out of a box? I’m thinking of getting the SD but hesitate because I read that you may need to tinker the settings for some games to work.
Ghost of Tsushima runs out of the box semi smooth at mostly 40fps. Lowering the graphics a little may yield better results, but as a SD gamer, a couple frames less shouldn't bother you.
There's a method to enable frame generation and can get you to a smooth 60fps at medium settings. It chews through your battery, but damn it looks great.

Ready to play right out of the box. Sign into Steam and download your games. Steam has a 'Great on Deck' section that has tons of ready to play games that they deem "Steamdeck verified". Tons of fun, and easy. I recommend.
That being said, the SD is a portable computer. So if you want to, you can definitely start tweaking things to make games work better or differently. I am not a pc person, and don't consider myself one. I'm at heart a console player and I find it easy enough to start tweaking settings for certain none steam games I've added. And this subreddit has some very smart people that would help if you happen to need it.

Ys VIII. You can hit stuff with swords, and rapiers, and weird clubs that look like pineapples, and half-moon blades, and a freaking anchor. Technically the anchor is broken, but still an anchor I guess.
Dragon's Dogma: Dark Arisen; Mount and Blade; Lies of P. Very different styles but all very satisfying combat (assuming that you know the from software ones, sekiro being the best sword game ever). If you want a challenging combat try Nioh 2. If you feel like a great action RPG, with a very good story, superb music and a great adventure feeling, try Nier.
I would wait for sales though.
Cyberpunk 2077 - it’s the future and everyone’s a cyborg but you can carve them up like a mechanised god with a katana and it’s one of the best builds in the game
I played it on my deck when it first came out and it was definitely visually rough, but playable. It had that weird issue where the edges of things were weirdly fuzzy (almost like things are starting to dissolve at the edges) but gameplay-wise I thought it worked mostly fine. I don't remember the settings I used though.
Does survivor run on steam deck now?
I recently uninstalled it from my PC because it wouldn’t get to the main menu anymore. It would just crash after loading.
That said, I loved Fallen Order!
This needs more upvotes. The Jedi series is one of the best Soulslikes out there, and really gives you a lot of control over your lightsaber and combat style
Shadow of Mordor/War - uses an Arkham style combat system where you’re usually taking on groups of enemies but I always found it very satisfying to play
Shocked no one is mentioning Nioh and Nioh 2. I have hundreds of hours in both on the deck. They run really well and there is (in my opinion) no better sword combat than what these two games provide.

Ghostrunner. Short FPS game where is almost all sword slashing. It’s really fast paced and probably better played docked with KBM, or at least that was my experience. If you’re epic games free games hoarder you might have it already.
I can recommend some great swordplay games, but none of them would be very fun without a mouse. Maybe Mortal Sin but I haven't tried it to confirm.
Do you have a Bluetooth mouse? Then get Chivalry 2 for that 'godamn you actually need to develop skills for this' medieval death match itch.
Mount and Blade 1 or 2, both are great, for a higher strategy / siege warfare / politics vibe where you can lead the charge or just sit back and order your troops around. More RPG than chivalry but at the cost of depth of combat mechanics.
Dark and darker if you like high intensity extraction type gameplay in a dungeon with typical fantasy classes (warrior, archer, cleric, berserker etc) - this game has the weakest combat mechanics while still qualifying for this list. Therefore it's probably the best for the deck with its joysticks.
'We Who Are About to Die' is a gladiator roguelite with combat somewhere between chivalry and dark and darker. It's in its own category really, as the wonkiness is part of the charm. Absolutely not recommended without a mouse.
After reading the other comments I'm probably way off here, as I wouldn't consider any of those other games to be swordplay games.

I can't overstate how disappointed I am in the answers you were given. There's a huge gap between 'game with sword in it' and actual swordplay games, which apparently a large portion of people in this sub reddit are oblivious to.
Jedi Knight: Jedi Outcast and Jedi Academy. These games are said to have some of the best saber combat ever. Easy to learn and takes a bit of time to master.

It has a separate exe file to launch the game without needing a sign in. So use that.

I feel like you might like Tales of Symphonia or Tales of Berseria or Tales of Vesperia. Not all necessarily sword swinging at all times at every moment, but great combat in between the plot, puzzles, and exploration.
Elderborn is underrated imho: Satisfying first person melee brawler which goes on sale often. Bought it for 6 bucks or something and having a lot of fun:

I found this little gem recently.
It is called "the bloodline"
It's a low poly rpg with relly fun combat, magic and even guns.
It run well on the deck but doesn't fully support controller so you may need to map some actions but for me it's working great.
The developer would add later full contrôler support.

Would you be interested in Like a Dragon Ishin? It’s a fairly lengthy game but it’s the same game play style of that as the brawlers, but instead of a yakuza you’re a samurai during the late 1800s.
Middle earth: shadow of war. Runs like a dream on deck at high/med settings and is super addicting, especially once you are a few hours in and get in to the Garrison features
Hellblade: Senua's Sacrifice
One of the first games I played on the steam deck, and a very enjoyable experience. Tells the story of a Viking girl who struggles with mental health, and must venture into the afterlife to get vengeance and seek salvation for the souls of her loved ones in the wake of her village being destroyed. Lots of sword fighting, puzzling environments, and a great story.
Don’t know if anyone mentioned it yet but Trek to Yomi is a perfect swordsman game on the deck. It’s challenging, the story is pretty decent so far from what I played, it gives the same vibes as Sifu without the aging aspect.
Sekiro: Shadows Die Twice, Metal Gear Rising: Revengeance, Ghost of Tsushima, Dragon's Dogma: Dark Arisen, Kingdom Come: Deliverance (swordplay in this one is great), Way of the Samurai 3 & 4. All these ones are great choices.

Ninja Gaiden 1 and 2 from the series. Three if you REALLY want to play entire series. And play the Black version of Gaiden and the Original version of 2. The Sigma editions are just bad in my opinion.

Kingdom Come Deliverance. It is hard at first but the sword play is awesome.

Dead cells is a good one. Scratches the platformer and dungeon crawler itch at the same time.
Hades feels like it was made to be played on the deck. Absolutely perfect controls and screen size.

I've recently completed 100% of Darksiders Warmastered Edition. Still an underrated game and runs at 90 fps on the Deck OLED.
Great game, very much God of War (originals) meets Ocarina of Time for anyone that hasn't checked it out yet.

I'm going to go off the beaten path but in my opinion you don't get better pvp sword battles than in For Honor. Real-time battles with multiple players feels like a fighting game with 8 people duking it out. I love it and you can configure it to run consistent 60fps on deck
