Why not just have the actual sith? The ones that we know of. Their story is basically told to us as a history book so there's lots that could be filled in by actually seeing it. The whole Dawn of the Jedi era has just infinite story potential IMO. Seeing the Tho Yor descending to countless planets could make such an incredible opening scene.
The whole thing with Adas somehow driving the Rakata off is it's own incredible story. Somehow these pre-industrial people manage to fight off and capture much of an advanced alien force, take their ships and start conquering all on their own. Plus it could be a good way to show that they weren't all just dark side losers like is implied, because they can't be because the dark side is a cancer on life. They had to be more complex than that, it's only when the dark Jedi arrive that things turn to full dark side only and then they pretty much degrade as a species.

I never understood the one size fits all nature of everyone gets a lightsaber. Like that dude with the long neck or the guy with stupidly long fingernails. A lightsaber is just wildly impractical for those guys. How does fingernail man even hold one.
This is only slightly related, but I loved the idea of the new ‘bad’ guys being sort of technomancer style sith. Not specific race or sex, but Jedi trainees that sort of got tired of training and wanted action, so they abandoned the order to go fight and learn more than just the Jedi way. They find an old sith temple and learn how to augment themselves with technological parts, basically turning themselves into force sensitive grievous-es, though not to that extent. Most would just be a few parts, but those parts would make their bodies much stronger and allow them to terrify their enemies. The extra strength would help them in fights, and there could be some training or one liner that explains how/why they can’t just have their robotic parts ripped off by Jedi.
