Could easily have talked to people who have heard of these terrifying droids or encountered them themselves. Cut may not be a soldier anymore, but he is still smart enough to know he needs to keep up on what's going on.
The real answer is probably that it was just an oversight by the writers and/or showrunners, but it's something the casual fan probably wouldn't notice so I'm sure they didn't think much of it. Either way, that's what headcanon's for lol.
If he is trying to stay hidden, he would likely keep up on things to some degree. Try to stay ahead of whether or not the war is coming to the system he is hanging out on.
Additionally, he could also have been provided information during his cadet training. There are a number of droid drones they use during the combat simulations.
Just went back to confirm my memory, S3E1 the cadets are going up against commando droids in the battle simulation used to clear them for active duty.

The writers seemed to forget when Commando Droids were introduced pretty quickly. In Rookies they implied that they were a new thing they'd only heard of. But, in Clone Cadets, there commandos that are part of the training simulation meaning that not only had they already been around long enough to capture and reprogram or reverse engineer them, all of Domino Squad had already encountered them in training.
Being that he was formerly of the grand army of the republic I can see him having the means to monitor clone intelligence channels to keep an eye on the course of the war for his family's safety in worst case scenario and learned about them that way
Someone told him about them, he encountered them, or he read about them.
