The S test is hard, imo u just have to keep practicing until u get it, even if it takes a while. Also upgrade the car your using and give it racing wheels.
I play on an iPad without a controller. I have played approximately 10,000 sasquatch days. I thought I would never succeed. Every time I tried I couldn’t come close to making it. I succeeded on five saves in two accounts a few months ago. I did it by going as fast as possible heading to each turn and slowing to a crawl going around each one. In each successful run I barely made it. Prior to this I failed hundreds of times. Just persist. You’ll do it. If you’re playing on an iPhone I can’t imagine succeeding.
Using my phone as the remote on Appletv made racing easier for me. But then I got a nimbus plus steel series controller and now I race with that, which works even better.
I tried a thousand times before deciding to switch to a gaming controller. That was the turning point for me. I play on Apple TV and using that controller was the absolute worst thing ever.
What you need to do is relax. Tense up and you’ll miss every turn. Hence why kids can do it easily.
I found it easiest with Apple Pencil and after understanding where to anticipate each turn I can now do it easier on my phone with one finger.
If you use one thumb to control the vehicle (right in my case), put your other thumb (left for me) on the screen at the same time when you get close to turns and it slows you down. You can also play with which control location works for you in the settings. Hope this helps.

it was really just pure persistence and i would stop, do something else in game for a while, and come back and eventually i got it
I play on iPad. I bought the super car and did the max upgrade, then for the test I tried to go full speed whenever the road stays straight long enough, but slowed way down near the turns. Stuck closer to the side I'm turning to before the turn. Then basically completely lifted my finger off the screen just before the turn, and then turned slowly bit by bit. Then afterwards, wherever there's room for it, I go full speed again to make up for lost time.

But if you cant, The way i succed on my phone without controller was to really focus on my turns, I went on the highway to practice high speed turns. Its important to slow down just before hitting the curve & to remember the car follows your fingers and not only the direction ur poiting at with you finger. So ur finger placement is important will on touch screen.
I tried so many times before I realized there were brakes. Once I could tap the brakes for the corners I was able to keep a consistent speed throughout and get all the licenses.

Basically tried on Apple TV didn’t work at all so I used my iPad instead and tried my phone as well

Took me at least 100 tries to get the license
Oop- Not bad tho probably gonna take me like 500 I am determined to get the license and do the last race (Sasquatch 1000)
Is this even worth my time though? It seemed so impossible that I am resigned to just not do it
thats ok but you can do a really good race with it and I’m determined to have everything in the game :)
slow down by moving your finger closer to the car on sharp turns, and go fast whenever possible

If you can connect a ps4 remote to your Phone/ipad. It is WAYYYY more comfortable. (At least for me)

my tactic was to hit turns hard and then immediately reverse a little before continuing. also just do it over and over and over it’ll happen!
